Artichoke Frittata w/Roasted Red Pepper Sauce

Guess who feels like cooking today?  Well, yeah, that would be me.  I know you are asking yourself, "What's up with that?"  It's a great question as even Mister thinks that I have forgotten what a kitchen is for.

I have a friend over today and even started out the day with Cranberry Scones which you can find the recipe for HERE.  I wonder if I'm coming down with something.

So - back to the Artichoke Frittata.  These are just yummy.  To do the Roasted Red Pepper Sauce that goes over it takes a bit of time, but is oh so worth it.   Many of you know that I used to sell Pampered Chef which left me with quite a few interesting cookbooks.  This recipe comes from one called, "Cooking For Two & More."  Mister and I have gone through this book page by page and made the delightful dishes that fall between it's pages.

I took a few pictures today while making this, but not near enough.  You will just have to read and try it out yourself.  Start by preheating the oven to 350 degrees and then assemble your ingredients.

You will need 1 red bell pepper, 4 eggs, 3 oz. cream cheese (softened), 1 garlic clove (pressed), 1 jar (6 ounces) marinated artichoke hearts, drained and finely chopped, 2 tbsp. snipped fresh basil, 2 tbsp, freshly grated fresh Parmesan cheese, 2 tbsp chopped onion, 1 1/2 tbsp. tomato paste, 1 1/2 tsp. balsamic vinegar, olive oil, water, and pepper.

Over to Abilene - Josh Soccer and Jon's Bday Party

It's an Abilene kind of day.  You know the kind --- a 2 1/2 hour drive through Texas to spend some quality time with a daughter and grands.  Yep, one of the best kind of days.  Our first stop upon arrival is soccer games, both being played and refereed by grands.  After finding the fields, we settle in on some bleachers to watch Josh's game and discover a little friend in the grass right by us.

How cute is this?  I know, I know - this post is supposed to be about grands.

Jen and Bekah are in Town for Soccer

Bekah's high school soccer team has made the playoffs thus bringing them into the metroplex for a game.  I am off to Kennendale for the morning game.  It's a pretty good shot that she won't play in the game as she is the backup keeper, but I'm giving support and it's a chance to visit with Jen.

Flowers for the Soul

The Dallas Arboretum stays open late on Wednesdays so Mister and I are off for an stroll and the chance for some evening light photograph opportunities.  Come along with us and enjoy the absolute wonder our eyes behold.

The current exhibition throughout the garden is "The Great Contributors" with it's magnificent bronze statures.  What a sheer delight they are.  You can check it out between now and the end of November.

The azaleas are in bloom too, leaving a color explosion  EVERYWHERE!!  I do so love this flower and wish we had the right soil at our house for them.  Alas, we do not.

Deep Ellum Art Festival

Yay!!!  Let the art festival season begin.  I do so love these and hope to be in town for several this year.  Today, we are off to Deep Ellum to enjoy as much eye candy as possible.  The best part of eye candy?  No calories.  What shall we find today?

It's a beautiful day and many others have had the same idea as us.  For me, this only adds to the fun atmosphere.  We start the path up and down the tents, looking for something that we just can't go home without.

East Texas Day Trip

Mister and I are off to Lone Oak today as there is a vintage sewing machine event going on AND it's an area we haven't explored much yet.

To read ALL about the event itself, please check out this post.  We do manage to drool over a few machines and I'm excited to put some of what we learn into application.

We both have a great time and spend about 3 hours with the group before moving on.  No, I didn't manage to come home with another machine.

Several antique shop stops are made but the best find of the day is at a local shed sale.  Mister finds a box with a train in it for $20.00.  Once we get it home and check it out better, it appears he scored big time.  Now to find some track and the grands will have another wonderful item to enjoy.

What a fun little day trip.  I'm kinda sorry the camera didn't really come along this time.
