Oatmeal Raisin Cookies for Mister

It's Christmas Eve and I am doing everything I can to keep busy.  Next up are some Oatmeal Raisin Cookies for my sweet Mister.  They are his favorite cookies by far.  He has located a new recipe to try and I'll share it here with ya'll.  It is from the Gracie Mansion in New York.

Preheat the oven to 350 degrees and line two baking sheets with parchment paper (I used a silicone baking mat); set aside.

In a large bowl, using a spatula, cream together 1/2 cup (1 stick) unsalted butter - room temperature, 1 cup packed brown sugar, and 1/4 teaspoon salt.  I didn't have quite enough dark brown sugar so I had to add a wee bit of light brown to fill the cup.  It'll be okay and dark brown sugar goes onto the grocery list.  The mixture will become almost pasty.

Next, add 1 egg, 1 teaspoon vanilla, and 1/4 cup water; mix until well combined.




I've mixed it for several minutes and it is all combined, but as the water is not warm, the sugar has not all dissolved.  It shouldn't.


In another large bowl, put 3/4 cup plain flour, 2 cups quick-cooking oatmeal (not instant), 1 teaspoon cinnamon, 1/4 teaspoon baking powder, 1/4 teaspoon baking soda, and 1/4 teaspoon freshly grated nutmeg.

Mix together well.

Either add the flour to the sugar mixture or the sugar mixture to the flour and fold together until well-combined.

The mixture will be wet -- and stick together well.

Add 1/2 cup raisins.

Stir until well combined.


Using a 1 1/2" scoop, place dough onto prepared baking sheets about 1 1/2" inches apart.  Mister felt that the scoops needed to be flattened but the recipe did not indicate that.

Bake until edges begin to brown, about 20 minutes.  Let cookies cool on baking sheet for about 10 minutes before transferring to a wire rack to cool completely.  Enjoy.
